frittata

hi..
this is my first attempt at food photography, not the greatest quality with the light fading on our deck.
a simple dinner, just the two of us. frittata..something i can almost make with my eyes closed, the ingredients i usually have in the fridge. i'm not a huge cook but i do like everything i eat & feed my family to be highly nutritious, quick and easy to make.
i've been very health conscious for most of my life & now with a daughter studying nutrition i'm learning more.
this is something i made up and the measurements don't need to be exact. it's gluten free, low carb, high protein & tastes pretty good too.

what you'll need : 
1 medium sweet potato peeled & chopped into chunks & steamed
about 8 free range eggs - even better organic
about 1 1/2 cups peas or baby spinach or both
about 1/4 cup milk
about 100 grams goats fetta
fresh basil
herbamere or salt


mix eggs with milk & herbamere or salt. heat a frying pan (medium heat) with small amount vegetable oil. pour eggs in, scatter sweet potato, peas & crumble goats fetta & torn basil over the top.
cook til bottom browns. move pan under griller til top is browned and fritatta is cooked through. cut into quarters and serve with a sprig of basil.
feeds 2, 3 or 4








we're loving eating outside every night, daylight savings is great for that. watching the sun go down and the light fade.. such a special time of day.

  14. This has made me hungry. That frittatta looks absolutely delicious. I make them too, but haven't tried one with sweet potato..I'll be giving this a go and I soooo love goats cheese. Leahx
